zipy chocolate cake with fudgey frosting
ZIPPY CHOCOLATE CAKE WITH FUDGY FROSTING

CAKE
125g softened butter
2/3 cup castor sugar
3 egg 1 1/2 cups self-raising flour
3-4 tbs cocoa
1/2 cup milk

FUDGEY FROSTING
3 tbs cocoa
3 tbs softened butter
2 cups sifted icing mixture
2 tbs milk
1 ts vanilia or brandy

METHOD:
combine all ingredients in a mixing bowl. beat together using an electric mixer on low speed until well mixed. increase mixer speen and beat for another 2 min.

spoon mixture into non-stick round cake pan and bake at 190 degree for 35-40min/until cake test as cooked. cool on a wire rake then split in two.

Fudgey frosting:
beat all ingredients together until mixture form peaks. spread icing mixture roughly over the top of the cake, use remainder as fillings. (top may be garnished with chopped walnuts)
